- Fry the onion, pepper, garlic and spices in 2 tbsp oil over a medium heat for 5 minutes until softened.
- Add the mixed beans (don’t drain), hot stuff and bbq sauce and leave to cook for 10-15 minutes until the sauce has reduced, stir to avoid sticking.
- Remove from the heat and leave to cool, once cooled add the cheese and mix until all ingredients are combined.
- In a frying pan, add a drop of oil and warm the tortillas through for 1 minute each side, add the filling so that it covers half the tortilla, keeping the other side untouched. Flip in half so the tortilla becomes a semi circle, cook for 2 minutes each side or until cheese has melted.
